Sally's Yorkshire Pudding

Although a hot oven is recommended I usually cook it the same temperature as the roast beef (325 degrees F) during the last 20 - 30 mins of cooking.

Stir into a bowl:

  • 7/8 cup flour
  • 1/2 tsp salt

Make a well in the centre, into which pour:

  • 1/2 cup milk
  • 1/2 cup water

Stir in the liquid. Beat until fluffy and add:

  • 2 eggs

Continue to beat until large bubbles rise to the surface. If you get busy and and have to let it stand for a while make sure to beat it again bringing bubbles to the surface.

Prepare a muffin pan - pour a very small amount of vegetable/olive oil into each muffin holder and preheat the pan in the oven for about 3 minutes.

Pour the batter into the muffin pan. Bake the pudding for about 20 - 30 minutes - when the pudding has risen and is lightly golden. Serve at once. Makes 9 muffins.
