Antipasto

Makes 22 pints.

  • 2 lb gr pepper
  • 2 lb red pepper
  • 3 lb cauliflower
  • 1 gal black olives, pitted+drained
  • 3 cans green beans
  • 3 jars white pickled onions
  • 4 cans mushrooms
  • 1 jar dill pickles
  • 5 cans flaked tuna
  • 3 jars stuffed olives, drained
  • 2 c white vinegar
  • 2 c olive oil
  • 2 litres ketchup

Gather together a work party for chopping.
Cut up everything into fairly small pieces.
Put vinegar, oil, ketchup into a pot and heat almost to boiling.
Add ingredients and stir.
Pack into jars and seal.
Can in hot water bath for 25 minutes.
