Brine fish.
Stella culinary says to brine in 5% solution for 2-3 hrs or for 20-60 mins. 1 hr @ 5% seemed too salty to me.
Rinse w cold water.
Sear in combination of clarified butter and canola oil and finish in 500 degree oven.
