Bannock

Time: 20 minutes: 10 minutes prep, 10 minutes frying.

Makes 8 pieces of bannock.

Ingredients:

  • 9 oz (2 cups) flour
  • 1/2 teaspoon salt
  • two teaspoons baking powder
  • 1-2 teaspoons fresh ground pepper
  • 1 teaspoon fennel seeds (optional)
  • 2 oz butter, grated.
  • 1 cup milk
  • 2 tablespoons water
  • oil for frying.

Directions:

Combine flour, baking powder, salt, pepper, fennel, and butter in a bowl. Preheat a cast iron pan on the stove. Preheat the oven to 250, and put a plate with paper towels on it in the oven.  Add milk and water to dry ingredients until batter is just combined. Add oil to the pan. When it is hot, spoon out four ~3.5 oz portions of dough. Fry on one, side, then turn when brown. Gently dab the tops with a paper towel to remove excess oil. When second side is brown, transfer to the plate in the oven and do the second batch.

Goes great with salmon.
