Lemon Snapper

  • ½ c. flour
  • 1 tsp. grated lemon rind
  • Salt & freshly ground pepper
  • 4 red snapper fillets
  • ¼ c. vegetable oil

Sauce

  • ¼ c. butter
  • 4 thin lemon slices, cut in quarters
  • ½ tsp. sugar
  • ½ c. chopped chives (optional)

Season flour with lemon rind, salt & pepper. Cover fish with flour mixture on both sides. Heat enough oil in skillet on medium heat to film the skillet. Fry fish 2 to 3 min. per side or until golden. Keep warm. Add butter to skillet and fry lemon pieces for 2 min. Sprinkle with sugar and cook until lemon pieces are golden, about 2-3 min. longer. Scatter with chives and pour over fish. Serves 4.
