Beet Salad with Goat Cheese and Walnuts
- 4 medium beets

- 1/3 c. chopped walnuts

- 2 tbsp. maple syrup

- 10 oz. mixed salad greens

- about ½ c. frozen orange juice concentrate
- ¼ c. balsamic vinegar
- 1/2 c. olive oil
Boil beets. This takes forever. But if you use a presser cooker it will take 20 – 30 mins. Peel and slice. While beets are cooking, warm up walnuts in frying pan until warm and toasting & stir in syrup. Stir until evenly coated & remove from heat. Do not overcook or it will go solid. Whisk together orange juice, vinegar, oil to make dressing.
Assemble. Put greens on a plate. Add beets, walnuts and top with daps of a sausage thing of goat cheese (about
