Lemon Curd Tarts

Shells

  • 1 c. sifted flour
  • 1 tsp. baking powder
  • 1 tbsp. sugar
  • ¼ tsp. salt
  • ½ c. butter
  • 1 tbsp. cold water

Roll out pastry gently. Bake at 325° F. for about 8 min

Filling

  • Juice & rind of 2 lemons
  • 1 c. sugar
  • 3 beaten eggs
  • ¼ c. butter

Mix sugar, eggs and lemon in a double boiler. Cook with lid on. When the mixture is thick, remove lid. Add butter and stir. Fill shells with lemon mixture and serve.
