Raspberry Oatmeal Squares
- 1 c. flour
- ½ c. brown sugar
- 2 tsp. lemon zest
- ¼ tsp. soda
- ¼ tsp. salt
- ¾ c. chilled butter/margarine
- 1 ½ c. rolled oats
- 1/3 c. chopped almonds
- 1 c. raspberry jam
- 1 tbsp. lemon juice
Combine flour, sugar, zest, soda, and salt. Cut in butter, ie cut butter into very small chunks and add. Stir in oats. Press 2/3 of mixture into base of 9” pan. Combine jam, lemon juice. Spread over oat mix. Combine remaining oat mix with almonds. Sprinkle on top. Bake at 350° for 15-20 min. This is what I made you for Christmas last year.
