Sponge Cake
- 1 tsp. lemon/orange rind

- 1 c. sugar

- 3 to 6 eggs

- 1 tbsp. lemon juice

- 1 c. flour

- 1 ½ tsp. baking powder

- ¼ c. boiling water
Pre-heat oven to 350° F. Mix rind into sugar. Beat egg yolks and then add sugar/rind mixture and beat some more. Beat in lemon juice and boiling water. Sift in flour and baking powder. Whip egg whites and fold into batter. Bake 45 min.
