Pancakes
- 1 ½ c. flour
- 1 tsp salt
- 3 tbsp. sugar
- 1 ¾ tsp. baking powder
- 1 or 2 eggs
- 3 tbsp. melted butter
- 1 to 1 ¼ c. milk
- 1 grated apple (optional)
Making pancake batter is just like making waffle batter! First, sift dry ingredients together (flour, sugar, salt, baking powder). Separate the eggs and stir in all the liquid ingredients except egg whites (ie the egg yolks, milk, butter). In a separate bowl, beat egg whites and then fold them into mixture. If using apple, gently fold in the grated apple into the mixture. Put butter into a frying pan or crepe pan and fry on low heat.

Last weekend we wanted to make pancakes, but we only had 1/2 c. of milk, so we added an extra egg and a little extra butter instead. They were great! They turned out super fluffy. 3 eggs is the way to go.
Next time, try: 3/4 c.- 1 c. milk to 3 eggs to same amount butter.
Tried with this flavour combo and it was great!
1 tsp cinnamon 1/4 tsp cardamom 1/2 tsp vanilla 1 apple
Back to using 2 eggs.
