Tomato Snapper Dish
- 1 ½ pounds snapper
- ½ c. chopped onions
- 3 small chopped tomatoes
- Optional: a chopped pepper
- 1 tsp dried basil
- ½ c. chopped mushrooms
Fry onions in olive oil until soft. Add tomatoes, mushrooms, pepper, basil. Cook in fry pan until saucy (maybe 15 min). Put fish in pan. Pour sauce over fish. Bake for 20 min at 325°. Serves 4.
