Plum Cake
- 2 ½ c. flour
- 1 ½ tbsp. yeast
- 4 tbsp. sugar
- ½ c. butter
- 2 egg yolks
- lemon rind
- salt
- 1 ½ c. milk
Add yeast and sugar to 1 ½ c. flour. Heat milk and butter to 125 °, add egg yolks, then mix into flour & yeast mixture. Add remaining c. flour and spread onto cookie sheet. Cover with plum halves.
Topping
- 5/8 c. flour
- 2 tbsp. sugar
- 1/8 c. butter
- ¼ c (1 oz.) ground almonds
- a little milk or egg white
Blend topping ingredients in food processor. Spread over plums. Bake for ¾ hr. at 375°.
