Ultimate Butter Tart
Tart Shells
- 2 c. all-purpose flour
- ¾ tsp. salt
- 1 c. butter
- 4 tbsp. ice water
Mix flour and salt; cut in butter, then mix in ice water. Roll out thinly on floured board. Cut into rounds w 4” cutter, and fit into muffin cups.
Filling
- ½ c. brown sugar
- ½ c. corn syrup
- ¼ c. butter
- 1 egg, slightly beaten
- 1 tsp vanilla
- ¼ tsp. salt
- ¾ c. raisins
Combine all ingredients except raisins; mix well. Put raisins into pastry shells. Fill 2/3 full w. syrup mixture. Bake on bottom shelf at 425° F. for 12-15 min. until just set. Don’t overbake! Cool on wire rack.
