Easy Microwave Vanilla or Chocolate Pudding
- 3 c. milk
- 6 tbsp. cornstarch
- 6 tbsp. sugar
- Pinch salt
- 6 tbsp. cold milk
- 1 tsp. vanilla
Place 3 c. milk into 4-cup glass measure. Microwave on medium for 7-9 min. or until scalded.
Mix cornstarch, sugar, salt in a small bowl. Add the cold milk and stir. Slowly stir the cornstarch mixture into the hot milk.
Microwave on medium for 3-4 min, or until pudding thickens. Stir twice during cooking. Stir in vanilla. Put into small glasses. Chill before serving.
To make chocolate pudding, use the above recipe and stir ¼ c. cocoa into the cornstarch mixture. Increase sugar to 2/3 c. Everything else stays the same.
