Potato Pancakes
- 6 med. potatoes (2 lb.)
- .), peeled and grated
- 2 eggs
- ¼ c. finely grated onion
- 1/3 c. flour
- 1 tsp. salt
Beat eggs with a fork and add onions, flour, salt. Grate potatoes into little pieces and squeeze out excess potato water. Put potatoes in colander; squeeze out more water. Combine with egg mixture. Fry in olive oil until golden-brown.
Make sure to heat the frying pan up until hot or otherwise batter will stick to the pan.
