Roasted Red Pepper Sauce

  • 2 red peppers
  • ¼ tsp. salt
  • 1 tbsp. olive oil
  • 2 garlic cloves
  • ¼ c. chopped onions
  • ½ c. cream

Roast peppers in oven at 450° until charred. Let cool in bowl with lid on it. Skin peppers. Fry onions and garlic in oil. Put in Cuisinart or mixer with red peppers. Add cream and salt.

If you want a more intense red pepper flavour, you can add up to a tablespoon of sweet Hungarian paprika. After the onions and garlic are soft, add the paprika, cook for about a minute to caramalize.
