Cheesecake
- 3 x 8 oz. cream cheese

- 1 c. sugar

- 6 eggs (separated into yolks and whites) 1 c. sour cream

- 1/3 c. flour

- 2 tsp. vanilla

- rind of 1 lemon

- juice of 1 lemon
Crust: Combine ¾ c. Graham wafer crumbs, 2 tbsp. sugar, ½ tsp cinnamon, 6 tbsp unsalted melted butter. Press crust into greased pan.

Filling: Cream cream cheese, add sugar. Beat in egg yolks. Stir in sour cream, juice, vanilla and mix until smooth. In a separate bowl, beat egg whites until stiff and fold into filling mixture. Pour filling into crust-lined cake tin. Bake at 350 ° for an hour. Let sit in oven for 15 min. with the heat turned off, or eat it if you’re impatient. Honestly, who can wait 15 min for cheesecake?
