White Rice
The proportion of water to rice is 2 to 1, ie. add two cups water for every cup of rice. You want to use a very thick, heavy pot; the idea is to steam the rice as much as possible. Boil water and add rice. When pot has returned to a boil, turn the heat down to simmer rice. Avoid lifting up the lid to check the rice; this will let out the steam. It should take about 15 minutes. The rice is done when all the water has been absorbed into the rice. A cup of uncooked rice will produce about 3 or 4 cups cooked rice.
