Mashed Potatoes au Gratin
- 7 medium sized potatoes, peeled and quartered
- 6 tbsp. unsalted butter
- salt and pepper, to taste
- ½ c. heavy cream
- ½ c. grated Parmesan or Asiago
- ½ c. fine bread crumbs
Cook potatoes in boiling water until tender. Drain and dry over heat in pan. Put through a potato ricer into a bowl. Add butter, salt and pepper, and blend well. Gradually blend in cream until desired consistency is reached. Mixture should not be too thin. Spoon potatoes into shallow baking dish. Sprinkle evenly with a mixture of the cheese and bread crumbs. Bake in a preheated 400° F oven until heated through and golden on top. If the potatoes are very hot, place under broiler until golden on top.
