Candied Grapefruit Peel
- 1 c. sugar
- ¼ c. water
- 2 tbsp. corn syrup (optional)
- 1 c. peel (prepared)
Cook until candy thermometer reaches 230°.
# To prepare peel
Soak overnight in 1 qt. water with 1 tbsp. salt. Drain, boil 20 min. Repeat 3 times. Cook about 4 hrs.
#For orange peel
Cut and cook 1 hr., then candy as above.
