Mom’s Bread-L

  • 6 c warm water
  • 1/3 c sugar or honey
  • 2 tbsp yeast
  • 1/4 tsp ginger
  • 2 c wh wh flour
  • 1/2 c oil
  • 2 c warm milk or 3/4 c pdr milk+2 c warm water
  • 5 tsp salt
  • 1 c each wheat germ, ground flax, oats, sunflower seeds etc.
  • 4 c wh wh flour
  • 6 c unbleached flour, plus more

Heat house. Mix water through wh wh flour. Let sit 20-30 minutes. Add oil through sunflower seeds. Mix then add 4 cups whole wheat flour. Knead in 6 cups unbleached flour. Keep adding flour until it feels sticky but not too sticky – about three more cups. Let rise in a warm place for 1.5 hours. Punch down, cut into 4 or 5 lumps, shape into loaves and place in greased bread pans. Cover let rise 2.5 hours. Pre-heat oven to 400. Reduce heat to 325. Bake for forty minutes. Take out of pans and place on racks so bottoms don’t get soggy.

The order of the ingredients is wrong - water through yeast means water, ginger, honey, wh wh flour, yeast.

At least three more cups of flour is needed. make sure the board/table you are kneeding it on is well floured or the cleanup will be long.
