Chili and Cornmeal
Sauce
- Meat sauce
- Chili to taste (about 1 1/2 tsp.)
- A little sugar (about 1 tbsp.)
- 1 tbsp vinegar or 2 spoons
- Optional but yummy: 1/4 tsp cayenne
Make meat sauce but add chili, sugar, vinegar instead of basil.
Cornmeal
- 3/4 c. flour
- 2 1/2 tsp. baking powder
- 1-2 tbsp sugar
- 3/4 tsp salt
- 1 1/4 c. cornmeal
- 1 egg
- 1 c. milk
- 2-3 tbsp melted butter
Sift flour, baking powder, sugar, salt. Add cornmeal. Beat in egg, milk, butter.
Pour on top of chili and bake at 425 for 15 - 20 mins.
