Rice Pudding
- 1 cup leftover white rice
- 2 cup milk
- 4 Tbl. brown sugar
- 1 Tbl. butter
- 1/4 cup raisins
- 1/2 tsp. vanilla
- Optional: 1/4 tsp. cinnamon, 1/2 tsp. lemon rind, 1 tsp. lemon juice, 1 egg
Combine all ingredients, bake in the oven at 325 until milk is absorbed, about 45 minutes.
This recipe can easily be scaled up or down, depending on how much leftover rice you have!
