Borscht
- 5 beets not peeled
- 2 pounds stewing beef
- 2 onions, chopped
- 1 tin of tomatoes, drained (save liquid)
- 3 large carrots sliced
- 2 celery stalks sliced
- 1 potato per person, cut in chunks
- 2 cloves garlic
- Put liquid from tomatoes in measuring jug, add water to make 2 quarts of liquid
- Flavourings: salt, pepper, lemon juice, sugar
Let all this cook about 2 hours. Take out the beets, peel, slice and return to pot. Add flavourings to taste at the end.

If you have large beets you may want to cut them in halves or quarters to make sure they will cook in two hours. It’s fine to peel them first if you prefer.
Get the beets, beef, onions and tomatoes simmering for the first hour or so. Then add the other vegetables and simmer until they are cooked to taste, maybe 30-40 min more.
