Banana Bread
- 1 1/2 c. all-purpose flour
- 1/4 c. wheat germ
- 2 1/4 tsp. baking powder
- 1/3 c. butter
- 1/2 c. sugar
- 3/4 tsp. lemon rind or a couple of Tbl. lemon juice
- 2 eggs
- 1 to 1 1/4 ripe banana pulp
- 1/2 c. chopped walnuts or chopped pineapple (optional)
Sift flour and baking powder. Blend butter, sugar, and lemon. Add eggs and banana pulp to butter mixture. Add in flour mixture. Fold in nuts or pineapple. Place batter in a greased loaf pan. Bake for 1 hour at 350.
