Quiche Lorraine
- pie crust
- half a medium onion
- 1 tsp. flour
- 1 c. grated cheese (Gruyere, Swiss, cheddar)
- 1/4 c. Parmesan
- 5 eggs beaten
- 7/8 c. milk
- 7/8 c. light cream (or milk)
- 1/4 tsp. nutmeg
- 1/4 tsp. salt
- 1/4 tsp. white pepper
- bits of ham, bacon or smoked salmon (optional)
Pre-heat oven to 450.
Bake pastry shell for 5 minutes
Sprinkle pie shell with flour. Cover with ham, bacon, or salmon if you are using that. Sprinkle with grated cheeses.
Beat eggs, milk, cream, salt, pepper, nutmeg. Pour over grated cheeses. Bake for 15 minutes at 450. Lower temperature to 350 and bake for 10 more minutes, or until a knife inserted into the middle comes out clean.
