Zuccini Puff 2

- 2 c. raw zuccini shredded - 1 c. old cheddar cheesem grated - 1 medium onion chopped - 1/4 c. butter or oil - 1/2 c. chopped pepper green,red or orange - salt and pepper to taste - 6 eggs - 1/2 c. bread crumbs - 1/2 tsp. basil, - 2 Tbls. parmesan Saute onion and pepper in butter. Add the zuccini and cheddar. Beat eggs until frothy and lemon coloured. Fold zuccini, cheese grated - 1 medium onion chopped - 1/4 c. butter or oil - 1/2 c. chopped pepper green,red or orange - salt and pepper to taste - 6 eggs - 1/2 c. bread crumbs - 1/2 tsp. basil, - 2 Tbls. parmesan Saute onion and pepper in butter. Add the zuccini and cheddar. Beat eggs until frothy and lemon coloured. Fold zuccini, cheese, onion, and peppers into the eggs. Pour into 2 quart ungreased casserole dish and top with bread crumbs, parmesan, and basil. Bake at 375 for 30 min. or until a knife inserted comes out clean.
