Antipasto
Makes 22 pints.
- 2 lb gr pepper
- 2 lb red pepper
- 3 lb cauliflower
- 1 gal black olives, pitted+drained
- 3 cans green beans
- 3 jars white pickled onions
- 4 cans mushrooms
- 1 jar dill pickles
- 5 cans flaked tuna
- 3 jars stuffed olives, drained
- 2 c white vinegar
- 2 c olive oil
- 2 litres ketchup
Gather together a work party for chopping.
Cut up everything into fairly small pieces.
Put vinegar, oil, ketchup into a pot and heat almost to boiling.
Add ingredients and stir.
Pack into jars and seal.
Can in hot water bath for 25 minutes.
