Grilled Trout with Fresh Fruit Salsa

  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tbsp vegetable oil
  • 4 rainbow trout or salmon fillets
  • salt & pepper
  • 2 kiwis, peeled & diced
  • 1 small red pepper,diced
  • 1 c. halved red grapes
  • ½ c. diced cucumber
  • 1 green onion, sliced
  • 1 tbsp chopped fresh mint
  • ¼ tsp. hot pepper sauce

Combine 1 tbsp. of the lime juice with honey & oil; brush over trout. Sprinkle with salt & pepper. Fry fish in olive oil. Combine remaining lime juice, kiwi, red pepper, grapes, cucumber, green onion, mint and hot pepper sauce; season to taste with salt & pepper. (Can be covered & refrigerated for 1 day.) Serve over grilled fish.
