Grilled Trout with Fresh Fruit Salsa
- 2 tbsp lime juice
- 1 tbsp honey
- 1 tbsp vegetable oil
- 4 rainbow trout or salmon fillets
- salt & pepper
- 2 kiwis, peeled & diced
- 1 small red pepper,diced
- 1 c. halved red grapes
- ½ c. diced cucumber
- 1 green onion, sliced
- 1 tbsp chopped fresh mint
- ¼ tsp. hot pepper sauce
Combine 1 tbsp. of the lime juice with honey & oil; brush over trout. Sprinkle with salt & pepper. Fry fish in olive oil. Combine remaining lime juice, kiwi, red pepper, grapes, cucumber, green onion, mint and hot pepper sauce; season to taste with salt & pepper. (Can be covered & refrigerated for 1 day.) Serve over grilled fish.
