Flourless Orange Cake

Cake Ingredients

  • 2 Navel oranges boiled for half an hour
  • 3 eggs
  • scant cup of sugar
  • 1 1/2 c. ground almonds
  • 1/3 c. Grand Marnier
  • 1 Tbl. baking powder

Frosting

  • 4 ounces (squares) semi sweet chocolate

Method

Preheat oven to 350 degrees.

Put boiled oranges, skin and all, into a food processor, and process until a mash. Beat eggs with sugar and Grand Marnier. Add orange mash, almonds, and baking powder. Bake for 1 hour.

When cake is cool, melt chocolate in the microwave or over hot water. Cover cake.

Historical note: This is a recipe of the Sephardic Jews and probably hails from Morocco where both almonds and oranges are grown. The lack of flour makes it a suitable cake for Passover. Whether or not baking powder is kosher enough for Passover, is a subject of debate. Technically, products leavened by fermentation, that is, yeast, are disallowed. So, leavening with a chemical like baking powder is okay (say some, although others say this compromises the spirit of the holiday). You might see versions of this recipe which are more kosher and leave out the baking powder, but use more eggs.
