Walter Wiener's Red Cabbage
- 1 red cabbage
- four apples (I usually use apples that mush up like Macs)
- about 1/3 cup brown sugar
- slightly less than 1/3 cup balsamic vinegar or cider vinegar (should be mild, not too acid)
- about a tsp. of salt
- 1/2 cup raisins
Method
Finely slice cabbage, peel apples and cut into chunks. Add sugar, vinegar, raisins and salt. Cook until cabbage is soft and apples have disappeared into mush. (About half an hour.) Simmer at moderately low heat and watch it, so that the cabbage doesn’t burn. You can increase sugar and vinegar if you like, do it gradually though, or you might make it overly sweet, or overly acid.

I caramelized the brown sugar and I think that pairs well with the cabbage and makes the flavour more complex
