Orange Cake
What you need
- 2 large Navel oranges
- 3 eggs
- scant cup of sugar
- 1 1/2 cups ground almonds
- 1/3 cup Grand Marnier
- 1 Tbl. baking powder
- 4 oz chocolate, can be a combination of semi and bittersweet.
- 1 Tbl butter
What to do

Put oranges in a pot and cover with water. Boil for half an hour. Puree in the Cuisinart. Beat eggs with sugar. Add orange mash, almonds, baking powder and Grand Marnier.

Butter cake pan or line pan with parchment paper.

Bake at 350 for 1 hour. Test with toothpick to make sure it comes out clean.

Melt chocolate, add butter and coat cake with the icing.

Addition of 1/3 c. flour improves the cake, I think. Makes it more cohesive.
I prefer to do a ganache for the icing, it’s easier to work with.
Also suspect Grand Marnier can be replaced with Orange blossom water at some ratio (all the alcohol bakes off anyway).
I separate the eggs, and split the sugar between the whites and the the yolks, so that the whites stabilize. Then I can cut the baking powder in half.
I also add 1/2 tsp of salt.
Decorate with pistachios and pomegranate seeds.
I accidentally made this with two eggs last time. Ooops.
Suspect done temp is 195 Fahrenheit.
