Anna's 2-in-one Winter Recipes
In a large pot, bring water and 1 package small white beans to boil. Cover and turn off heat.
Meanwhile
Brown in olive oil:
- 1 small roast (seasoned with salt)
- 1 large onion
- 4 cloves garlic
Add:
- 1 carrot
- 1 celery
- 3 bay leaves
- 1 bottle red wine
- 1 can diced plum tomato
- water to cover
- salt & pepper
Bring to boil and simmer, covered for 4 hours or until meat is fall-apart-tender. Remove meat, drain and retain liquid for beans.
To drained, soaked beans add
- leftover liquid from the roast (there should be about 4x as much liquid as beans, if necessary, top up with water)
- 1/2 chopped onion
- 1/3 cup ketchup
- 2 tbsp molasses
- 1/4 cup maple syrup (more or less to taste)
- Salt & Pepper
Cook on low heat or in slow-cooker, stirring occasionally until beans are soft. Leave the lid off for the final hour or two, to thicken. Takes about 6 hrs. Better the following day.
