Granola Bars ala Yottam Ottalenghi
Ingredients
- 45 g pecans roughly chopped
- 45 g dried cranberries or cherries
- 45 g pumpkin seeds
- 30 g sesame seeds
- 30 g ground almonds
- 190 g (~2 c.) whole rolled oats
- 1 1/4 tsp. cinnamon
- 95 g (1/2 c.) unsalted butter
- 85 g (~1/4 c.)honey
- 95 g (~ 1/2 c.) brown sugar
Method
Preheat oven to 140 C (285 F). Line a 8 x 8 in. baking dish with parchment paper. Toast pecans for a few minutes and increase oven temp to 160 C (320 F). Soak apricots and cherries/cranberries in hot water for 10 minutes, drain off water. Mix all ingredients excepts butter, honey, sugar. Put these 3 in a small saucepan and simmer, let cook to light brown, but don’t burn or let go very dark. Pour in dry ingredients and mix. Pack into baking dish. Press down with a knife or spatula. Bake for 22 minutes. The bar will be soft when removed from oven, but will firm up as it cools. Take out of tin and cut into bars.
