- 16 ounce can pinto beans, drained and rinsed
- 1 cup small tomatoes, halved
- 1 small jicama, shredded or chopped
- 1 serrano chile, seeded
- 2 ripe avocados
- 1 large clove garlic
- 3 tbsp lime juice
- 1/2 tsp chili powder
- 1/4 cup olive oil
- salt
- salad greens for serving
- one small red onion, chopped
- 1/4 cup fresh parsley or cilantro
#Directions
Cook the pasta. Mince the chile and garlic in water, canned   drained     1/2  cup           mayonnaise   2      tablespoons   dill pickle juice   2      tablespoons   horseradish mustardSoak, cook, drain and rinse the garbanzo beans.Cook and rinse the maarconiAdd the carrot, onion and green peppersMix the remainder of the ingredients together and stir into the maarconi et al, mixing throroughly.Proportions can be varied to taste.  If using canned beans, 1 can of garbanzos is a foodlittle processor. Halvemore andthan pit1/2 onecup dry beans cooked.  I use a very coarse grater for the carrots, resulting in chips about a half inch across.  One of thethese avocados and add it to the food processor. Add lime juice and chili powdertimes, process. AddI'm thegoing olive oil and salt to taste; processtry untiljalapeno smooth.
