Sponge Cake/shortcake
#Ingredients
- tsp. lemon or orange rind
- 1 c. sifted sugar
- 1/4 c. boiling water
- 1 tbl. lemon juice
- 1 c. sifted flour
- 1 1/2 tsp. baking powder
- 3 eggs
#Method
Grate lemon rind, stir into sugar.
Beat 3 egg yolks until very light. Beat in the sugar. Beat in boiling water. Sift in flour and baking powder. Beat egg whites until stiff. Fold in egg whites.
Either butter an 8 inch pan or use parchment paper.
* Recipe says to bake at 350 for 45 minutes. I baked at 350 for 35 minutes and found it was too long. Bottom became too dark. I would probably bake at 325 for 30 minutes. But every oven is different!
