Apricot Granola Bars
- 2/3 c. dried apricots
- ½ c. butter
- ¼ c. granulated sugar
- 1 1/3 c. flour
- 2 eggs
- 1 c. brown sugar (packed)
- ½ tsp baking powder
- ¼ tsp. salt
- ½ tsp. vanilla
- ½ c. chopped nuts
- ½ c. shredded coconut
Preheat oven to 350° F. Rinse apricots, cover with water and boil 10 min. Drain, cool and chop. Combine butter, granulated sugar and 1 cup flour, blend until crumbly. Pack into bottom of greased 8”x8” square pan. Bake at 350 ° F. 15-18 min., until lightly browned. Beat eggs, vanilla, and gradually beat in brown sugar. Sift remaining ½ c. flour w. baking powder and salt. Blend into egg mixture. Stir in nuts, coconut and apricots. Spread over baked layer. Bake at 350 ° for about 30 min. longer. Cool. Cut into 16 bars.
