Mrs. Wallace's Dark Christmas cake
- 1/2 lb. butter
- 1 1/2 cup sugar
- 5 eggs
- 3 cups flour (after sifting)
- 1/2 cup strawberry jam (may substitute part brandy)
- 1 tsp almond extract
- 1 tsp cinnamon
- 1 tsp each allspice, salt, soda
- 1/2 tsp clove powder
- 1 cup dried fruit ( pears, figs, apricots...)
- 1/2 cup chopped dates
- 1/2 cup seedless raisins
- 1 lb. currants
- 3/4 lb. seeded raisins
- 1 cup chopped dried black cherries
- 1 cup chopped nuts
Line baking pans with parchment paper. Prepare fruit and dredge with some of the flour. Cream butter and sugar well, add eggs one at a time beating well at each addition. Add extract and preserves then dry ingredients and fruit. (Reserve a little batter before adding the fruit to put on top of the cake to prevent the fruit drying out or burning.) bake in a 350 deg. oven for 20 min. then reduce to 275 deg. to finish baking 2 1/2 - 3 hrs.
