<p>For 1 large cake. Line baking pans with parchment paper. Prepare fruit and dredge with some of the flour. Cream butter and sugar well, add eggs one at a time beating well at each addition. Add extract and preserves then dry ingredients and fruit. (Reserve a little batter before adding the fruit to put on top of the cake to prevent the fruit drying out or burning.) bake in a 350 deg. oven for 20 min. then reduce to 275 deg. to finish baking 2 1/2 - 3 hrs..</p>
