<p>Pour water and sugar into mixing bowl. Add yeast. Let stand 10 min. Stir and add semolina flour and salt. Stir well. Add two cups flour and stir more. Knead until sticky but not too sticky, about 10 min. 1 tsp of oil in bowl. Roll dough ball around in oil. Let rise until tripled. Knead a few more min. Let rise until doubled. Pinch and cut dough into two peices and shape into thin loaves. Sprinkle baking sheet with 1 tbsp cornmeal. let rise to almost doubled. Preheat oven to 400. Beat one egg with 1 tbsp of water and wash the loaf tops. Sprinkle with Sesame or poppy seeds. slash. reduce to 375 and bake for 30-40 min.</p>
