Spicy Chick Peas -L
- 1 c chopped onions
- 1 tsp ginger (fresh or dried)
- 3 garlic cloves
- ½ tsp salt
- 1 small chili
- 2 cups canned or cooked
- 2 tsp tamarind concentrate
- chick peas
- 1 c chopped tomatoes (puree)
Saute the onions, garlic and chiles in 1 tbsp vegetable oil until the onions turn golden. Add tomato sauce and blend. Dissolve tamarind sauce in ½ c hot water. Add beans and simmer, uncovered on low heat for 20 -30 min, until the sauce becomes dark and thick. Mash with potato masher.
