Charlotte's Lemon Curd Tarts

Shells--ingredients

1c. sifted flour

1 Tbl. sugar

1/2 c. butter

1 tsp. baking powder

1/4 tsp. salt

1 Tbl. cold water

Method

Roll out gently. Bake at 325 F. for about 8 minutes.

Filling--ingredients

juice and rind of 2 lemons

3 beaten eggs

1 c. sugar

1/4 c. butter

Method

Mix sugar, eggs, and lemon in top of double boiler. Cook. Put lid on. When thick, remove lid. Add butter and stir. Fill shells.
