Lemon Sponge Pudding
- 1 c. sugar
- 2 egg whites
- 1 tbsp. butter
- 2 beaten egg yolks
- 1 c. milk
- grated rind & juice of 1 lemon
- 1 heaped tbsp. flour
Mix butter, sugar and flour. Add egg yolks and milk. Add lemon juice and rind. Beat egg whites stiff, then fold in. Bake at 325° in a hot water bath for ¾ - 1 hr.
