<p><strong>Pancakes</strong></p> <p><em>This recipe is from my auntie Donna in Kelowna. These pancakes are extra-fluffy at mountain elevation, but they&rsquo;re pretty darn good at sea level too!</em></p> <ul> <li>1&frac12; cups&nbsp;flour</li> <li>3 Tbsp.&nbsp;sugar</li> <li>2 tsp.&nbsp;baking powder</li> <li>1 tsp.&nbsp;salt</li> <li>2&nbsp;eggs</li> <li>3 Tbsp.&nbsp;melted butter</li> <li>1 tsp&nbsp;vanilla extract</li> <li>milk to make 1&frac12; cups of liquid</li> </ul> <div>&nbsp;</div> <div>Stir together all dry ingredients.</div> <p>In a liquid measuring cup, beat eggs, then add butter and vanilla. Add milk until the overall liquid volume is 1&frac12; cups.</p> <p>Make a well in the dry ingredients, then add most (but not all) of the wet ingredients in the dry ingredients. Stir until all flour is incorporated. Add more liquid ingredients if you need too, although batter will be fairly lumpy and thick.</p> <p>Heat a pan on medium-high heat. When the pan is fairly hot, turn it down to medium heat. Melt some butter in the pan, then cook the pancakes in the butter.</p>
