Cranberry Orange Clay Baker No-Knead Bread

<li>1 tsp. regular or bread-machine yeasat</li>
<li>1/2 to 1 tsp. salt</li>
<li>1 c. dried cranberries</li>
<li>zest from two oranges</li>
<li>1 1/2 c. warm water</li>

<p>In a large mixing bowl, whisk together flour, yeast</li>

</ul>
<p>In a large mixing bowl, whisk together flour, yeast, salt, zest and cranberries. Add water, stirring until mixed. Mixture will be sticky. Cover bowl and set aside for 12 hours, or overnight.</p>
<p>Pre-heat oven to 450 F. Place clay baker or dutch oven with lid in oven for 30 min. Meanwhile, pour the sticky dough onto a heavily floured board and shape into a loaf. Do not knead!</p>
<p>Carefully place loaf in clay baker. With lid on, bake for 30 min. Remove the lid, and bake an additional 15 min. Remove bread from oven and from pot, and cool it on a rack.</p>
