Easy Crispy Potatoes For Two

  • 3/4 lb Yukon Gold or red potatoes, unpeeled or peeled, cut into 1-inch pieces
  • 1/2 tbsp oil
  • 1/4 tsp salt
  • 1/8 tsp pepper

Combine in a bowl, cover, and microwave until potatoes begin to soften, about 6 minutes. Drain well.

Add 1 tbsp oil and drained potatoes to hot skillet and cook over medium-high heat until potatoes are golden and tender, about 10 minutes.

This makes nice and crispy potatoes! No need to roast.
