Celery Root Soup
- 3 Tbsp butter or olive oil
- about 1 cup of onions
- 2 bay leaves
- 3 sprigs of thyme
- 1 celery root, peeled, cut into small pieces
- 6 c. vegetable stock/ chicken stock
Cook onions until translucent. Set aside. Cook pieces of celery root until they begin to caramalize on the outside. Combine with onions, add stock, bay leaves, and thyme. Cook for about half an hour and then puree the mixture in a blender or food processor.
Some recipes call for 1 c. of cream. I don't usually add that, but you can, if you are feeling decadent.
Sprinkle with nutmeg.
