Banana Mug Cake for One
<div>This is a fun dessert-in-a-mug that takes minutes to make yet is surpisingly good. It is basically like pudding or banana bread. The perfect dessert when you're at home alone and have a banana to use up. Choose a large mug and place on a plate in the microwave in case it overflows.</div>

<li>1 tbsp butter</li>
<li>1 tbsp milk</li>
<li>1 egg (lightly beaten)</li>
<li>1 ripe banana (or I used 1/2 a very ripe banana)</li>
<li>3 tbsp plain flour (or substitute self-rising flour for the flour and baking powder)</li>
<li>½ tsp baking powder</li>
<li>2 tbsp brown sugar</li>
<li>1/4 tsp cinnamon</li>
<li>optional: serve with a scoop of ice cream or a sprinkle of nuts</li>

<div>Put butter into mug and microwave for 30 seconds to melt.</div>
<p>Add in milk (so egg will not cook), and then egg, and lightly beat with a fork until combined.</p>
<p>Add banana into the mug, mash, and continue stirring with fork until mixed through.</p>
<p>Finally, add dry ingredients into the mug and beat with your fork until combined.</p>
<p>Place mug in the microwave and cook for 1-2 minutes on medium heat.</p>
<p>The pudding should be risen and still slightly gooey in the middle. If still undercooked for your liking, cook it further in 10 second bursts in the microwave.</p>
