Super Easy Squash Soup for One
<p>This is an extremely easy lunch for one straight from the freezer. </p>
<ul style="margin-left:0px">
<li>6 oz (1/2 package) frozen cooked squash</li>
<li>3/4 cups or squash puree</li>
<li>3/4 cups chicken broth</li>
<li>1/4 teaspoon ground cumin (I also added some cardamom and coriander)</li>
<li>salt and pepper to taste</li>
<li>2 tablespoons fat free plain Greek yogurt (I had no yogurt and used butter and lemon juice instead)</li>
<li>2 tablespoons chopped parsley to garnish (I used arugula instead)</li>
</ul>
<p><span style="font-size:10.5pt">Combine squash, chicken broth, spices, salt and pepper and in a medium saucepan and heat over medium heat until squash is thawed and almost blended and all ingredients are hot, about 15 minutes.</span></p>
<p>Remove from burner, whisk in Greek yogurt. Check seasonings and add salt and pepper as needed. Blend if desired, or just mash it up.</p>
<p>Serve garnished with chopped parsley.</p>
