Vegetables with Cheese Sauce
Can be done with leeks, cauliflower, leeks and mushrooms.
6 leeks, white and light green part only or 1 cauliflower
3 Tbl butter
1/2 c. vegetable stock
1/2 c. whipping cream
1 1/2 c. smoked Cheddar
1/2 c. bread crumbs
1/2 tsp garlic (or more, to taste)
1Tbl chopped parsley
Wash leeks and slice into rounds or cut cauliflower into florets. Preheat oven to 375F
Heat 2Tbl butter in skillet, saute leeks about 2 minutes. If using cauliflower, you can roast it or stir fry it. Add stock and cream. Simmer until vegetables are done. Using a slotted spoon, tranfer vegetables to a baking dish. Sprinkle cheese over cooking liquid, cook at low heat until cheese melts. Pour sauce over vegetables.
Heat 1 Tbl butter in skillet, add garlic and breadcrumbs. Saute for about a minute. Stir in parsley and bake for about 15 minutes until sauce bubbles and top is golden brown.
